Dehydrated Herbs, Dehydrated Vegetables Dehydrated products

The simple addition of dehydrated products can add to appearance and flavour.
Spinach Powder can be added to pasta to give both colour and flavour.
Mono-di Glycerides

Distilled Monoglycerides (DMG)
Emulsifiers

Emulsifiers can assist with extrusion by providing lubrication through the die-face.
Mono-di Glycerides and DMG’s (Distilled Monoglycerides) assist with extrusion. These can be added to the cereal mix as a fine powder.
Flavours Flavour Savoury and herb flavours can add great interest to pasta products.
Guar gum Gums, hydrocolloids, stabilisers Guar gum can assist with noodle and pasta integrity during cooking.
Gum acacia   Gum acacia can assist with noodle and pasta integrity during cooking.
HPMC   HPMC can also assist with noodle and pasta integrity during cooking.

Plant sterols Nutraceuticals Pasta offers a great format for the inclusion of health-giving ingredients such as spirulina and plant sterols (phytosterols).
Spirulina   Hawaiian Spirulina, from Cyanotech is a micro-algae that is high in all-vegetable protein, rich in beta carotene, iron, vitamin B-12 and the rare, essential fatty acid, GLA. It offers a striking profile of vitamins, minerals and phytonutrients.

Spirulina beta carotene is ten times more concentrated than carrots. Spirulina also has the broad range of amino acids, along with iron and contains the essential fatty acid Gamma-linolenic acid (GLA).
