Sodium Citrate Acidity regulator, buffering agent Some products, particularly diet beverages, require some buffering to improve flavour. The addition of a small amount of Sodium Citrate can often enhance flavour.
Citric Acid Acidulants Citric Acid is a natural acidulant that gives a pleasant acid note.
Tartaric Acid   Tartaric Acid is a natural acidulant, but with a slightly more acidic profile than citric acid.

Other less commonly used acidulants are summarised in the Acidulants section.
Caramelised Sugars Aromatic, Flavour Caramelised Sugar Powders from Felix Koch Offenbach (FKO) can enhance coffee and nut flavours in instant coffee and chocolate beverages.
Cocoa Powder Colour, Flavour Lecithinated cocoa powders are used in instant chocolate drinks. These products are easier to disperse in cold water or milk.

We recommend cocoa powder from ADM. Please contact ADM directly: www.adm.com.
Natural Colours, Artificial Colours Colour Hawkins Watts Australia offers a comprehensive range of natural and artificial colours for use in all beverage applications.

Our suppliers, DD Williamson and Phytone, cover the colour spectrum.

We can also offer colours that are manufactured using a unique maltodextrin carrier to avoid colour specking when added to water. Ask for information on our "Non speck" colour range.
Flavours Flavour Spray dried flavours, from fruits to cream, coffee and chocolate flavours, can enhance and impart new flavours to powdered beverages.
Carrageenan Gum, hydrocolloid, thickener, stabiliser Specialty carrageenans are ideal for use in instant beverages. Carrageenans disperse easily.

We recommend carrageenans from FMC BioPolymer. Please contact FMC BioPolymer directly: www.fmcbiopolymer.com.
Calcium Carbonate, Calcium Citrate Minerals

Many manufacturers choose to add additional minerals to instant drinks. Typically these include calcium in a number of formats, but other minerals can also be added.
Hawkins Watts Australia has a comprehensive range of high quality inorganic mineral salts for use in beverage fortification.
Citrus Fibre Nutraceuticals Herbafood Ingredients, a division of Herbstreith & Fox, has a range of apple and citrus-derived fibres, including Herbacel AQ Plus Citrus Fibre. These fibres have very high water-holding capacity and have shown to sequester heavy metals, as well as promoting good intestinal health.
Spirulina   Hawaiian Spirulina, from Cyanotech is a micro-algae that is high in all-vegetable protein, rich in beta carotene, iron, vitamin B-12 and the rare, essential fatty acid, GLA. It offers a striking profile of vitamins, minerals and phytonutrients.
Spirulina beta carotene is ten times more concentrated than carrots. Spirulina also has the broad range of amino acids, along with iron and  contains the essential fatty acid Gamma-linolenic acid (GLA).
Potassium Sorbate Preservatives Potassium sorbate will prevent yeast and mould growth up to a pH of 5-6.
Sodium Benzoate   Sodium Benzoate has a similar effect on yeast and mould growth, but needs to be used in a product pH below 4, so is well suited to acidic juice applications.

Care should be taken to ensure legal requirements are met, and that flavour profiles are not adversely changed.
Acesulphame K Sweeteners Acesulphame K is a high Intensity sweetener
Fructose   Fructose is a crystalline sweetener with 1.2 to 1.6 times the sweetness of sucrose. Fructose can be used in products where sweetness profile and glucose content need to be controlled.

Fructose also has a low glycaemic index and can enhance the flavour profile in some drinks.
Stevia   Stevia from Daepyung is a natural high-intensity sweetener and sugar substitute extracted from the Stevia plant with applications in low-sugar formulations.
Sucralose   Sucralose is a high Intensity sweetener
