Felix Koch
Offenbach (FKO) manufactures a range of Caramelised
Sugars (Karasirups) in both dry and liquid forms
with different degrees of caramelisation. Caramelised Sugar
is produced by the controlled heating of sucrose, and regarded
as a versatile food ingredient for rounding off the taste
of food.
Felix Koch Offenbach has a unique
processing system that allows them to obtain consistent
results. Anyone who has ever tried to make caramel will
know how difficult it is to make a consistent caramel batch
after batch, but FKO have achieved it!
Their range of syrups and powders that give a range of flavour profiles, from
mildly caramelised through to burnt, bitter notes. We have found these products
especially good in enhancing caramel and coffee flavours.
The Karasirup 76/030-12 liquid is a mildly caramelised
sugar syrup with little bitterness and good caramel notes, useful for desserts
and ice cream products.
By comparison, the 75/760-02 is a dark, viscous liquid with a high degree of
bitterness and useful for chocolate and coffee products.
